Unloading the skin can be done by right clicking the skin and choosing Unload Skin from that context menu, and it has nothing to do with physically removing that skin from the disk. An example of doing this on the Settings skin that I mentioned: This settings skin is loaded by default, along with the visualizer skin, when you install Fountain Of Colors. I suppose it's when you said unload the settings skin that confuses me. I guess you mean remove it completely. I just realised I don't know how to do that. I'll take a look.
Actually i'm totally confused. Perhaps this is too much for me. what is a settings skin? How do I unload it?
Update: What I did was unload like you said. Deleted the folder for Fountain of Colour (after editing the file like you said). I then reinstalled the skin. I think it's worked? So now I guess I delete the backup?
In any case, don't worry, you won't break anything. If it doesn't work the first time, just unload both the settings skin and the visualizer skin, delete both the C:\Users\[User]\Documents\Rainmeter\Skins\Fountain of Colors and C:\Users\[User]\Documents\Rainmeter\Skins\@Backup\Fountain of Colors folders if they exist, then try again by following the same steps.
